This page will offer some helpful information into the world of properly brewing green tea

Temperature

One of the first things to consider is the temperature of the water used to brew the tea.   It is one of the most crucial aspects when it comes to brewing green tea. Temperature is a main contributor of how the tea with taste and smell after it's brewed.  Too hot a temperature or too cold could significantly change essential tasting elements of the tea.

A safe temperature range to brew green tea would be between 176 to 185 degrees Fahrenheit. The hotter the temperature of the water, the higher likelihood of burning the tea leaves and producing a bitter taste.  Also keep in mind that warming the mug prior to brewing will prevent rapid cool down of the tea.

 Steeping

Different sources will provide different steeping times.  The best time range for steeping your tea is anywhere from 2 to 4 minutes, 5 minutes at the most.  The longer a tea is steeped the more polyphenols that are released, an antioxidant which is found in tea.  Steeping the tea for less amount of time will bring out more caffeine and less polyphenols.
